Veggie Chicken Bake Recipe (video)

Who loves a good stir fry? I don’t have a skillet large enough to accommodate the amount of veggies and protein for a solid meal prep. Cue my My Asian-inspired Chicken Veggie bake – an easy go-to that only takes 30 minutes! The best part about it is that you can kind of set it and (partially) forget it. I made this one while crushing a home work out. Tastes great on top of cauli-rice if you’re doing low carb, OR tastes just as good on quinoa or brown rice.

Marinade:
1/4 tamari or soy sauce
2 tsp sesame oil
1 tbsp honey
2 tbsp apple cider vinegar
1 tbsp minced ginger
1 tbsp Chinese all spice

Marinade cubed chicken breast overnight, mix with veggies, bake at 400 for 20 minutes. Mix. In for another 10 minutes then enjoy!
