Simple Glazed Salmon with Greens (video recipe)

 

You all know I loves me a 15-minute meal that’s rich in fats, protein and veg. I’m always trying to get my patients comfortable in the kitchen – remember that cooking and eating healthy does not have to be complicated!

Try my Asian-inspired baked salmon and greens! It’s one of my easy go-tos… tastes good with cauliflower rice, wild rice or quinoa if you’re feeling carbs!

Marinade:
2-3 tbsp honey
1 tbsp garlic
3-4 tbsp tamari or soy sauce
2 tbsp apple cider vinegar or lemon
1 tbsp sesame oil
1 tbsp grated ginger (optional)
3 salmon fillets

Set oven to 425deg C. Marinade salmon 30 minutes prior. Lay on pan with bok choy (halved). Use brush to dress leftover marinade onto greens, or if there isn’t enough use EVOO S&P (they crisp so be liberal with the dressings). Bake in oven for 10-12 minutes. Brush half way through. While baking steam string beans, dress in EVOO and season with your preference! (If you don’t have enough marinade double the recipe above!)
