Dr. Sandy’s simple guide to hardboiled eggs
No time for meal prep? My remedy to that is a batch of hardboiled eggs – 15 minutes tops with barely any clean up (done by the time you finish checking your morning emails, am I right? ) .
My love affair with eggs started in Residency when I found myself regularly craving mid-afternoon sweets from the local coffee shop (whose been there? ). After discovering that an egg or two could stave off those cravings and not have me thinking about food until dinner I was hooked. 2 eggs equate to ~ 150cal + 12g of protein, making it a perfect snack or add on to any meals. They are also the perfect vessel for just about anything you can think of … salt&pepper, guac, salsa, smoked salmon etc etc

Super rich in vitamin and micronutrients (notably vitamin b12, b2, b5, folate, phosphorous, selenium and vitamin A).
Contain all the essential amino acids humans need
Contain choline, a nutrient that helps to build cell membranes in and aids in singling molecules in the brain.
Increase “good” cholesterol, HDL, which is linked to lowering risk of cardiovascular disease
Rich in Omega 3 fatty acids (choose O-3 Eggs!) that can lower triglycerides (a risk factor for heart disease)
